Tanteo’s Sweet Heat Raspberry cocktail recipe: Rim a rocks glass with a lime wedge, dip in the candy rimmer salt and fill with ice. In a shaker with ice, pour 1-1/4 oz Tanteo Jalapeño Tequila, 1 oz. fresh squeezed lime juice, 1 oz. simple syrup and 4 raspberries, shake vigorously. Strain and pour into the rocks glass, garnish with a raspberry and jalapeño slice.
Tanteo’s Pepino Diablo cocktail recipe: Muddle two cucumber slices in a shaker with 2 oz. Tanteo Jalapeño Tequila, 1/2 oz. fresh squeeze lime juice and 3/4 oz. simple syrup. Add ice to the shaker and shake well. Strain into an ice-filled rocks glass rimmed with candy rimmer and a cucumber wheel.
The agave plants must grow about 8-10 years before the fruit is the perfect size and sweetness for Tanteo’s Jimadors hand selection. The agave are processed at Tanteo’s distillery and slow baked and shredded to produce juice for fermentation and distillation. The tequila is distilled three times to produce Tanteo’s Blanco Tequila, which is ready for infusion.
The infusion process is imperative to creating a fresh flavored tequila. Using jalapeños from local farms ensures that the peppers are fresh. Young peppers are then deseeded and placed in overproof tequila in custom maceration tanks right away and the ripe, mature peppers with the seeds and pith are infused with overproof tequila in custom maceration tanks too. The process doing two infusions rounds out the palate and flavor profile.
